Since my childhood, some of my fondest memories in the garden are related to the rhubarb. We didn’t have a lot of candies at home. And during summer I was at my grandparents. They lived in the countryside and there was even harder to get something sweet from the shop. I was a regular child who liked sweets and so I had to get something else instead. Rhubarb was the first thing you could get from the garden. When you cut it to the small pieces and add some sugar, you’ll get wonderful sweet. Since that time I have always liked the rhubarb and it has a big role in our spring/early-summer menu.
Rhubarb is very sour, because it has high concentration of vitamin C, malic acid, citric acid and oxalic acid. It is also rich source of calcium and potassium. You can even get some iron and phosphorus from rhubarb. Despite it strong taste, up to 93% of the plant is water.
All this makes it very good at strengthening your immune system and purifying your blood and liver. But keep in mind that for thousands of years in popular medicine high quantity of rhubarb has been used as natural laxative 😉 It can also increase the sharpness of your thinking and can be relieving factor for menopause symptoms. And don’t forget, that rhubarb can be part of preventing cancer. It effectively breaks down cancer cells and participates in their resorption.
Ways to enjoy walking on the road
As I mentioned above, during my child hood I liked very much rhubarb with sugar. It can be like a breath of fresh air in the selection of your sweets. Take one rhubarb, peel it and cut it to small pieces. Add 2-3 tea spoons of sugar and mix it. Let it stay for 15min. During that time sugar smelts and takes out the juices. It is very simple, but worth a try.
Fresh Rhubarb Bellini
On a warm day, there is nothing better than drink something very refreshing. One of my favorites is cold dry prosecco. When you add to it fresh rhubarb juice, then you’ll get truly amazing cocktail. It is very simple. Just take
- 2/3 prosecco
- 1/3 fresh rhubarb juice
Mix these together and enjoy your beautiful day.
