Everybody has a favorite cake and it is the tradition to make some cakes for special occasions. At least, this is the case in our family.
For many years I have made cloudberry cheesecake for birthdays. It is hard to imagine that some cake may taste better than this awesome cake! This is my and my wife's opinion. Our children don't agree with us. They want chocolate cakes, but I'm sure when they grow up and get more wisdom, they will see the (our) truth 😉 Cheesecakes are always very tasty. And when you add a little sourly taste of cloudberries and orange juice, you will have a superb cake.
Unfortunately you can find cloudberries in the swamps of Nordic countries only. Even in Estonia you cannot get cloudberries every day from supermarket. Luckily in fall I can buy the berries from market and store in freezer. But if you are able to get these berries from somewhere, try the cake!
Crust
150 g digestive biscuits |
100 g butter |
1 tbsp molass sugar |
First filling
400 g cream cheese |
2 egg |
1 dl sugar |
1 tbsp vanilla sugar |
Second filling
500 g sour cream |
0,5 dl sugar |
1 tbsp vanilla sugar |
Topping
200 g cloudberry |
1 dl cloudberry liqueur |
2 dl orange juice |
6 leaf gelatine |
Crust
Crush the biscuits and mix with melted butter and molass sugar.
First filling
Preheat oven to 200 degrees C
Whisk eggs and sugar till sugar is melted. Add cream cheese and whisk 2-3 minutes.
Add filling on top of the crust and cook it in the oven 20 minutes.
Second filling
Whisk sour cream and sugar 2-3 minutes.
Pour it on the top of first filling and cook in the oven 10 minutes.
Take the cake out and let it cool down.
Topping
Put gelatine leaves into cold water.
Heat orange juice with cloudberries.
When juice is hot, add cloudberry liqueur.
Take gelatine leaves from cold water and mix with a little of hot water till leaves are melted.
Pour gelatine into juice and mix.
Pour topping very gently on top of the filling and put for 12 hours to refrigerator.
