As of lately, this banana buckwheat bread is a dessert I make regularly. Although it is very healthy - no sugars added, vegan, gluten free, it is the taste and texture, what makes this bread irresistible.
When you make it, feel free to try different nuts and fruits. In this recipe I just share one of the options I have made.
5 ripe bananas |
300 ml buckwheat flour |
150 ml coconut oil |
1 tsp cardamom powder |
1 tsp nutmeg |
2 tsp baking powder |
100 g pecans |
5 dried figs |
10 dried plums |
2 tbsp cacao nibs |
2 tbsp coconut flakes |
2 tbsp chia seeds |
Preheat oven to 180 C.
Cut pecans, plums and figs into small pieces.
Melt coconut oil.
Put ripe bananas to food processor. Use the cutting blade to smash bananas.
Add coconut oil, buckwheat flour, spices and baking powder to food processor and mix with bananas. It takes about 2 minutes.
Add pecans, plums, figs, coconut flakes, chia seeds and cacao nibs and mix well.
Pour the mix in to oiled loaf tin and put in the oven for 1 hour.
